Ingredients:
π΄ 1 14 oz can jackfruit
π’οΈ 1 tbsp olive oil
π§ 1 medium onion, thinly sliced
π§ 4 garlic cloves, minced
π₯« ΒΎ cup bbq sauce
π§ 1 tsp chili powder
π§ 1 tsp paprika
π§ Β½ tsp turmeric powder
π§ ΒΌ tsp black pepper
π§ salt to your taste

Rinse, and drain the jackfruit. In a large pot, heat the oil, then add the onions and cook, occasionally stirring, until softened, about 4 minutes. Then add the garlic and cook until fragrant, about 2 minutes. Add the jackfruit and use a fork to shred the jackfruit as it cooks down. Add the chili powder, paprika, turmeric powder, and black pepper, and cook for another 2 minutes.

Bake the bbq jackfruit 350 degrees F (180 C) for about 20 minutes until caramelized. In the meantime, make slaw by shredding cabbage and carrots to a bowl. Then add ranch dressing and toss to combine.

Assemble by toasting the bun, then add a generous portion of bbq jackfruit, coleslaw, and pickles. It will keep in an airtight container in the refrigerator for a week, so this is a great for meal prepping.
